Chicken Rasam / Kozhi rasam is a delicious and spicy chicken broth flavored with freshly ground spices and coriander leaves. A much needed South Indian style soup/ rasam that needs to be slurped during this cold season/ any rainy day to keep you warm.This can be had as is to drink or served with some steamed rice.
INGREDIENTS
Country chicken-1 kg(cut into medium sized pieces with bone)
Coconut oil-2 Tbsp
Tomato-1(big size, sliced)
Shallots-3
Dried Red chillies-2
Pepper Corns-1/2 Tbsp
Coriander Seeds-1/2 Tbsp
Turmeric powder-1/4 Tsp
Water-1 litre
Handful of Corriander leaves
Salt as required
Method
1. heat the pan, add coriander seeds, pepercorns and dried redchillies.
2. Dry roast for 2 minutes and allow it to cool completely.
3. In a mixer-grinder add ginger, garlic, shallots, chopped tomatoes and dry roasted spices and grind it into a smooth paste and kept aside.
4.Heat the pot, add 2 Tbsp of cooking oil, once it s hot add chiken pieces.
5. saute the chicken pices for 2 minutes or until it turns into white.
6. Now add turmeric powder and mix well.
7.Add the grinded paste with little water.
8. Add salt as required.
9. Add 1 litre of water and stir well.
10. cover and bring it to boil in a high heat.
11.once its starterd to boil, continue to cook for 30 to 40 minutes in a medium heat or until the chicken cooked well.
12. After 40 minutes add some chopped corriander leaves and turn off the flame.
13. serve hot.
Note
You can presure cook this by following the method and cook for 2 whistle.
